My choice of John Henry's sugar-based rub seasonings:

1. Pecan

2. Hickory with Garlic

3. Big Mo's Mesquite with Lemon Pepper

4. Texas Passport--Jalapeno Mild or Hot

3. Or use any one of your favorite sugar-based rubs you own at home, remember that you can purchase any of those rubs at our store in Lisle!

Directions: Rub seasonings should be mixed in with meat thoroughly  Marinate for 2 hours in refrigerator until ready to grill or barbecue. Sear on each side and place on top rack away from direct heat. Save a pinch of seasonings to top off each serving. A 4-oz. serving should cook in 6-8 minutes, 3-4 minutes on each side.

Suggestion: Corn on the cob using John Henry's method would make a delectable side dish.

Secret: Once the patty is formed, insert your index finger through the center leaving a hole. This will prevent the patty from forming a ball and a raw center. The shrinking will be from the inside out, thereby leaving a product that will cover the entire bun.
